Weekend Treat {Coca-Cola Cake}
For some reason I was thinking about my 6th birthday recently & remembered the delectable Coca-cola cake my mom made me and my twin sister. I was in love. However, I'm not sure I have had it since & decided it was time to resurrect the chocolaty moist goodness that is the coke cake. David and I ate of it all week. Although the process is slightly weird, it was pretty easy. But with 3ish cups of sugar and 3 sticks of butter, its definitely not your every day dessert, but don't be scared, it's worth it.
Coca-Cola Cake
Cake:
2 cups sugar
2 cups self-rising flour
1 1/2 cups mini marshmallows
1 cup butter
3 tablespoons cocoa
1 cup Coca-Cola (I used classic, but will use Zero next time)
1 teaspoon baking soda
1/2 cup buttermilk
2 eggs
1 teaspoon vanilla extract
Frosting:
1/2 cup butter
3 tablespoons cocoa
6 tablespoons Coke
1 box (16oz) confectioners' suger
1 teaspoon vanilla extract
1 cup chopped pecans

I've heard of Coca Cola cake but I've never tried. Now I'll have to. Thanks for the yummy recipe!
ReplyDeleteI have never heard of a Coke Cake and I have every single cookbook known to man! So intriguing. I love 7 UP cakes though. Those are awesome on a hot day.
